Domaine Denizot brings a new level of finesse to the elegant slopes of Sancerre.
Sauvignon Blanc grapes undergo long and smooth pneumatic pressing with the handling of juices in a thoughtful way without rushing the musts (by gravity or slow and gentle pumping). They use select neutral yeasts and ferment the juice in two sizes of large barrels while resting on its fine lees. The barrels come from the Atelier Centre France cooper, which carries out steam strapping and a careful choice of woods that promotes the fineness of the grain by avoiding too pronounced markings of the wood.
It is then aged for at least one year in barrels following by bulk resting for six months, with this approach aiming to preserve the integrity and sensory texture naturally present in the grapes.
